Einkorn Flour Apple Galette
Serves 6–8
Ingredients
For the Dough:
Einkorn flour – 1 ¾ cups
Cold unsalted butter – ½ cup (1 stick), cut into small cubes
Coconut sugar – 2–3 tbsp (for slight sweetness in crust)
Salt – ¼ tsp
Ice water – 4–5 tbsp
For the Filling:
Apples – 4 medium, peeled, cored, and thinly sliced
Coconut sugar – 3–4 tbsp
Maple syrup – 2–3 tbsp
Cinnamon – 1 ½ tsp
Lemon juice – 1 ½ tsp
Vanilla extract – ½–1 tsp
Butter – 1–2 tbsp, cut into small pieces
Optional Topping:
Egg wash – 1 egg, beaten with 1 tsp water
Turbinado sugar or coconut sugar – for sprinkling
Make the dough:
In a bowl, mix einkorn flour, coconut sugar, and salt.
Cut in cold butter until mixture resembles coarse crumbs.
Add ice water, 1 tbsp at a time, until dough comes together. Form a disc, wrap in plastic, and chill 30–60 minutes.
Prepare the filling:
Toss sliced apples with coconut sugar, maple syrup, cinnamon, lemon juice, and vanilla extract.
Assemble the galette:
Preheat oven to 400°F (200°C).
Roll out chilled dough into a 12-inch circle. Transfer to parchment-lined baking sheet.
Pile apples in center, leaving ~2-inch border. Dot with butter pieces.
Fold edges over apples, pleating as needed. Brush dough with egg wash and sprinkle with sugar.
Bake:
Bake 40–45 minutes until crust is golden and apples are tender.
Cool slightly before serving.
